I have read conflicting information re: sample writing for my book proposal. Is it OK to send preface as the sample writing? About how long should the sample writing be?

Yes, and the sample writing length varies. That said, most agents prefer approximately 50 double-spaced pages, which is generally/usually 2-3 sample chapters, plus, possibly, a preface or introduction. 🙂
